Recipe: SPEEDY HARISSA SPICED LENTIL, FETA AND POMEGRANATE SALAD



This is one of my fave recipes that can be thrown together so quickly with minimal effort. It is great for speedy weeknight dinners, and if you double the quantities, the extra portion can be a great lunch option too. It's full of flavour, fibre and protein.

Ingredients:

1 pack of pre cooked puy lentils (I used @merchantgourmet) 1 tbsp of harissa paste Selection of pre roasted vegetables (I included cauliflower, peppers, onions, garlic, mushrooms and courgette) 2 handfuls of spinach 2 tbsp of balsamic vinegar 30g of feta cheese Fresh parsley for garnish 3 tbsp of pomegranate

Method:

Heat a drizzle of oil in a pan

Add the lentils, vegetables, harissa paste and balsamic vinegar and spinach to the pan and stir for 5 mins until fully cooked through

Tip onto a plate or bowl and top with feta, pomegranate and fresh parsley (Sundried tomatoes are also a great addition to this dish)
