Harissa tofu tray bake



I’m all about easy, yummy traybakes at the mo and this one is a goodun! Check out the recipe below!



Ingredients (serves 4)


1 butternut squash, chopped (keep seeds and skin on)

1 block of tofu (I used Tofoo large),

2/3 of a jar of harissa paste (I used Belazu rose harissa)

1 red onion, sliced

1 red pepper, chopped into chunks

1 can of chickpeas, drained

Juice and zest of one lemon

1 aubergine, chopped

1/3 Broccoli, broken into florets

1 tbsp of honey

80g of feta (optional)

Around 10 sundried tomatoes



Method:


Heat the oven to 200C


Take the tofu out of the pack and wrap in kitchen towel.


Pop the chopped butternut squash on a baking dish roast for 45 mins


After 10 mins add the chopped aubergine and pop back into the oven


After another 10 mins add the broccoli, pepper, onion then stir in the harissa paste, juice and zest of a lemon and pop back into the oven


Chop the tofu into cubes then add to the baking dish along with the drained chickpeas, sundried tomatoes and a drizzle of honey. Stir to combine then pop back into the oven for another 15-20 mins


Option to crumble feta on top for the last 10 mins too


When slightly browned and cooked through take out and serve!
